Good Things Grocer co-founder and Brisbane chef Kym Stone adds a fruity sweetness to a classic salsa.
It's a great as a taco condiment, or as a side to your barbecue meats.
Best of all, it's easy and only takes ten minutes or so to whip up for any occasion.

Ingredients
2 large ripe tomatoes, quartered
1/4 medium red onion, cut into large pieces
1/4 cup coriander leaves
1/2 red chilli (seeded if you prefer less heat)
1 large clove of garlic
1 1/2 cups of blueberries
Juice of 1/2 lemons
Good pinch of salt to taste
Chips or crackers to serve
Method
- Put the first five ingredients In a food processor. Cover and pulse until chunky.
- Add the blueberries and lemon juice. Pulse until a chunky salsa texture is formed.
- Add a good pinch of salt and mix gently with a spoon.
- Put the salsa in a bowl, cover and keep refrigerated till ready to serve.
- Enjoy with corn chips or crackers.
